Winemaking and Ageing The grapes are picked by hand at the ideal point, destemmed, crushed and macerated with pumping over. Fermentation takes place in stainless steel vats at 28-30°C until the desired Baumé degree is reached, at which point brandy is added, resulting in a fortified wine.
