Winemaking and Ageing The grapes are fully destemmed, crushed, and fermented at 25-30°C with skin contact for 2 to 3 days. Fermentation is then halted by adding grape spirit until the wine reaches 19% alcohol. It is then stored in stainless steel for 6 months, followed by aging in used oak casks, with filtration before bottling.
