Winemaking and Ageing The grapes are hand-harvested at the optimum point, destemmed, crushed and subjected to careful maceration to extract color, tannins and aromas. Fermentation takes place in stainless steel vats at 28-30°C, with constant pumping over, until the desired Baumé degree is reached. At this point, brandy is added, resulting in a fortified wine.
